Locke said, a Warrior Priest can be on horseback (Empire Book, Page 89). I have one of my Warrior Priestess on Horseback, and she's awesome with my Vanheim 75th cavalry. (As a self-plug, you can see my conversion here:
http://warhammer-empire.com/theforum/index.php/topic,49950.0.html ) Anyway, she helps a ton from keeping them from being "Knights of the Nerf Lance". It's also fun to give your Knights "Soulfire", which gives the Flamming... and sometimes Fear too! A goodly number of players don't realize that Flamming causes Fear against some types of units.
Also, as an aside on the Warrior Priest, don't forget now your Priests can attempt to cast all of their Prayers in the same turn. In previous editions, you could chose one Prayer for them to attempt a turn. Now you can try for all three. And since you only need 3+ to cast them, you can attempt to slim-cast Prayers on 1d6, with a pretty decent chance of success, if you have a low-power magic phase.
I'd be happy if the Witch Hunter could get a crossbow. I mean, really, it's a giant-stake thrower! How can you not be a Vampire Hunter, and not want to chuck stakes with such force as to impale Vampires to trees!?! Yes, I know it's "Witch Hunter"... but "Vampire Hunter" is cooler, to me. And sometimes you just need to go for style points. Shoot, as an aside, one of the best conversions I'd seen was a Witch Hunter redone to look like Vampire Hunter D. It was epic. EPIC!
As for your Engineer and Volley Gun, something to keep in mind. While he can only re-roll one artillery die, sometimes, it is worth it to try to re-roll, in order to get 3 MISFIRE results. And, I think the Engineer still gets his "Stand Back Sir!" roll during the ensuing explosion.
In my opinion, one problem with the Ruby Ring, it does not self-power, meaning it does not generate its own Power Die in order to try to cast its spell. You have to pull a Power Die from your pool of dice. In comparison, the Hurricanum and the Altar of Souls do self-power.
