Well, the spearmen will not benefit from the parry save, because that is only for HW & shield, and they must use the spears.

As I indicated before, a character in a unit cannot be targeted by normal shooting, or will have a 2+ ward save against templates, at least as long as there are 5 or more models of the same troop type. In that case, items like the Ironcurse Icon or the Charmed Shield are superfluous.
I would replace the Icon on the WP with a magic weapon.

If a BSB has a magic standard, he cannot take any other magic equipment. However, his re-roll ability is what you take him for, and it is best to kit him for survival. I would drop the Charmed Shield for a normal one, and give him the Dragonhelm.

In the 8th edition, CC often becomes a grinding match, because of steadfast. 30 models is more or less a minimum for a non-elite infantry unit. Unfortunately, shooting too is not what it used to be. You could drop one Detachment to increase the size of the Regimental Unit.

If you have points left, give the units containing characters a champion, to sacrifice if need be in case of a challenge by a powerful enemy.

- Well, it all depends on the model you have, but in the 8th edition, halberdiers are preferable over swordsmen, which are preferable over spearmen. I am not too enthusiastic about GS either: knights are a far better option.  But Demis are one of our best units.
- As it is, your WP exceeds his points value for equipment (50 points).  HA and Enchanted Shield with Dawnstone wiould give you a re-rollable 3+ AS for 30 points. Against Undead, the Shrieking Blade (Fear) for 10 points may be useful.
- The ToP won't do your Wizard much good. You do not want him in CC, and in a unit, he cannot be targeted by normal shooting, or will have a 2+ ward save against templates.
- You might consider changing one Detachment of Handgunners for Archers, and put the Wizard in there (-1 against BS Shooting, and Free reform). 
- Always take a musician, if possible: you get a no loss/win in case of a tied CC, a +1 to rally, and the  possibility of a Swift Reform. For 10 points, that is a bargain!!
- Any points you can save should use for a BSB, equipped for survival.

I am new to Warhammer (still have to paint my army), but, as classical scholar, I have a professional interest in this discussion and may perhaps offer some help on this topic. True enough, Warhammer is a fantasy world, but references to real history make the whole thing more interesting, at least for me. Since the Empire is clearly modelled on the Holy Roman Empire under Charles V, one does seem to have an ample choice of languages.  For instance, the motto of Charles V himself (Even Further) can be found not only in Latin (Plus Ultra) and German (Noch Weiter), but also and indeed most commonly in French (Plus Oultre).
But whatever language you choose, it seems to me that if you do use a real language, you should use it correctly. St. Augustine (I think) said that he would rather sin against the ablative than against the Holy Ghost, but there is really no need to do either.
Quibus dictis, here are some comments on individual points:

-   In Roman times, the ordo equester was indeed a social class. As Border Prince points out, the commonly used Latin term for knight in the Middle Ages was miles (nom. plur. milites). I am not sure if eques  (nom. plur. equites!) was used in the Renaissance, but I would not be too puritan on this matter. After all,  ordo equester/equestris was already used in the Middle Ages to denote knightly orders (also simply ordo, ordo militaris or ordo militum).  Frater (nom. plur. fratres) was also used for a member of the religious (but not secular) knightly orders.
-   Both panthera and pardus are correct Latin terms for panther.
-   A(b) + abl. can never used in this sense (neither OF nor FROM the knights).
-   I am afraid "pro palma quod veneratio" does not make sense at all. It literally means ‘for the palm (of glory) that veneration’.  ‘For glory and honour’ would be "pro palma (if you do not want to use the usual gloria) et honore."

So here are (some) of the possible combinations one might use for ‘Knight (of the order) of the Panther’:
Miles Patherae (or Pardi)
Miles ordinis Pantherae/Pardi
Eques Pantherae/Pardi
Eques ordinis Pantherae/Pardi

With miles or eques, I would avoid ordinis militaris/equestris/militum as too repetitive. Acronyms, which nowadays are generally used to denote religious orders (e.g. O.S.B: Ordo Sancti Benedicti – the Benedictines), seem an excellent idea (for the Knights Panther: OP/OMP or OEP), if only to save space.
