Ya tbh I am hoping what's in crowns renegade is in empire 2.0 as far as infantry. Would make me very happy. Price efficient infantry.

New FAQ/Errata is apparently coming based on leaks in Discord and it involves point tweaks. Of course if Empire infantry gets reduced to price of RC, then what is the point of RC? (Unless they drop those down by 1 point too)

I am realizing what I really want is just Sellsword infantry with the Empire list.

This is true. Steppenwolf attests to it.

I generally build the base up around the tab. It is much easier than removing the tab.

I bought Warlord game's pike n' shot german landsknechts before, and was disappointed at their scale and style. I also understand the type of bases they use are standard in historical wargames but removing them was very difficult. Wargamesatlantic's seems to match the 8th edition state troop scale pretty well on minicompare and I do like their style, I'll definitely look into it more!

There's also a flying carpet if you really want.

Those look a fair bit like the Wargames Atlantic Conquistadors platic:

Ideally I would like for it to be Pizzaro's minis but baggy pants

I do not expect to see any new Estalian-style sculpts from GW any time soon. But if you want something with that specific style, there might be something suitable in the historical miniature ranges - baggy pants and breastplate with tassets were quite popular in the late 16th century (which unfortunately is not particularly popular range for miniature companies).

Would these guys be close to what you had in mind (check the rear views for the pants):
