So I have started on the long quest of making a (3,200pt) list for each of these. So far I've purchased:
Grandmaster of the white wolf mounted
Seneschal of the white wolf on foot
Boris Toddbringer
Wizard (mounted)
Ar Ulric
20 Teutogen guard
10 Knights of the white wolf (added 10 more for 5 man flank units)
10 Knights panther
20 spearmen
12 archers
14 crossbowmen
20 free company that i can use as whichever, warriors of the white wolf or wolf kin (up to 40 now)
2 cannons
1 mortar
20 halberdiers
22 handgunners including 2 hochland rifle champs
what else should i get to flush out the army? I was thinking a unit of hunting hounds and maybe a unit of flagellants to change into wolf kin. Plus i need a bunch of priests for it as well. I want whatever i purchase to be useable in both lists.

Hounds are a nice idea. Flagellants too. You could upgrade/modify them to have more pelts and furs.
Cannons are an obvious choice. I can't remember if the Cult of Ulric somehow shunned the use of cannons, but Middenland (and Middenheim) surely use cannons.

No cannon in the 6th edition Cult of Ulric army list as such. However, since they were allowed DoW, they could always take a cannon or Galloper Gun as Rare choices.

Because there's always that one unit missing at 3k even. It's just where we ended up settling on for points years ago and have enjoyed every game since lol

Ulric doesn't use them, and I have them already for my main empire army, but i'm trying to shy away from them for both of these lists.
Flagellants work well as the wolf kin, but i think adding those mods might actually make them fit nicer, and not duplicate my models too much as i have a unit of flagellants for my main empire army. I was also thinking of getting some LastSword miniatures for a unit

More knights of the White Wolf.
To have a couple of units of 5 as flanking units.
My CoU army has:
22 White Wolf Knights
20 Teutogen Guard
40 Warriors of Ulric
20 archers / huntsmen
10 hunting hounds
Lots of priests, the WW GM, Ar-Ulric and Boris.
I used to have Knights Panther and Wolf kin. First I made wolfkin from converted 6th ed flagellants. Then I reclaimed them, and made them out of marauders, and then I reclaimed them too. They are a good idea, but I never really used them successfully in battle.
I believe the Middenland army can take cannon or mortars as Rare, but CoU doesn’t have them.
I also have 4 giant wolf riders - demi-griff rider conversions for 8th ed.

Warriors of Ulric, should i just use the free company as those? I may have to get more of them then lol.

Well I kitbashed and greenstuffed mine.
I used free company torso and legs - greenstuffed fur as boot tops, and used white wolf knight hammer arms and heads.
But that might be less doable now that those kits are all discontinued.

One of the things about the ulric list I'm doing is not taking a bunch out of my regular empire army for them, the flagellants for wolf kin i have to convert, but other than that, I want my free company to be interchangeable between regular and ulric. Yours do sound fantastic though lol.
For hunting hounds, i've decided on a resin printed set, haven't figured out the huntmaster though. I do have an extra of the guy that pulls the cannon in dow, he might work with a conversion on the weapon to make it a spear.

Had a test game last night against a Minotaur focused Beasts of Chaos list with the ulric list, couldn't roll to save my life, it was an old list i made last year, might need tweaking, but it didn't fare well at all. going to try middenland later

Minotaurs are awefully strong though. Monstrous infantry vs Cavalry is not a good matchup for the cavalry.

No, and the not rolling a single save in a bunch of attacks or hitting with all the dice only to wound with none didn't help either lol. Next time I'll try the middenland list, might work better

Added some more to the army, how does that look for a middenland army?

I have a couple ideas of adding in a couple units of 5 white wolf knights as flankers if i can find the points
