Hello,
If my cannon hits the corner of a unit of Elven archers (3 ranks deep), does it hit 1 rank or 3 ?

One hit.
BRB p. 113: "The bounce of the cannonball is treated exactly like a special kind of template, which we assume to be about the width of the cannonball itself." This means that only models under the template are hit, but with the additional limitation for cannons that a " maximum of one model per rank struck can be hit."

And if it ever comes up that the shot is going through files instead of ranks (the unit is being shot from the flank), you treat the files as ranks -- i.e. only 1 model can get hit per rank (file).

Assuming the cannon could still have line of sight, couldn't it rotate so that the shot COULD pass through multiple files?

Of course, as the cannon can pivot during the shooting phase, before firing. But perhaps the real target was beyond the Elven Archers, who were just a snack along the way.
