What program do GW use to create their armybooks and is there something like it that we as amateurs could use?

Good question, I for one have no idea but would like to be enlightened ( ::heretic::)

But until something comes to light (i.e some sort of gnoblar powered archeotech) I myself has found word and photoshop/paint to be adequit(for now).

I don't know specifically what it is that they use, but it is likely a desktop publishing software. Some Windows flavored option are
PagePlus
Print Artist
Print Shop
Microsoft Publisher
For the Mac there is
Apples Pages 2
Adobe InDesign (very expensive)
QuarkXPress (very expensive)
Print Shop
Swift Publisher
There is even an open source version for Windows, Linux and Mac
Scribus
My bet is on one of the more expensive ones, likely one of the Mac versions.

The only thing I've ever used from those lists are Microsoft Publisher about 10 years ago, and QuarkXPress about 20 years ago in a High School Graphic Arts class. I downloaded and looked at an early version of Scribus a while back, but didn't really do anything with it.
I don't know how good those other ones are, they are just ones that I know of. My knowledge of them is pretty limited due to the length of time since I last used them.

I used to be a fulltime Graphic Artist. Now I just do it on the side. I am willing to bet it is either Quark or Indesign. More than likely InDesign since Quark is fading and only used by companies unwilling to let it go (it is utter garbage).
So my money is on InDesign. The normal package is around $600 (thats the one I bought) but you can often get a consumer version with the purchase of some new PC's, I think Dell for the most part.

Well I have the current CS5 suite and so could be convinced to do a bunch of the layout in Ps Il and Id

Quark and InDesign are not specifically for mac, they are on Windows too.

Exactly The CS5 suite I have has indesign, photoshop, illustrator, fireworks, flash, bridge, dreamweaver, afterburner, and some others.
Indesign for page layout is probably the best tool to use for designing army books.
beyond that the art work and body content can be produced in virtually ANY program.
